Chimichangas!! Ole!



Chicken Chimichangas 

Ingredients:                                            Amounts:
12 inch Flour Tortillas                              1 each
Mojo Shredded Chicken                           5 Ounces
Southwest Black Beans                            3 Ounces
Shredded Cheddar Cheese                        2 Ounces
 Method:
Place these ingredients in the center of the tortilla and roll as you would for a burrito! Deep fry in a basket with the seam side down, until golden brown an 165F internal temperature.

Top with Queso Blanco, shredded prpperjack, shredded lettuce, diced tomatoes shredded cheddar and seasoned sour cream. Serve with salsa on the side. 

For the Mojo Shredded Chicken: 
Chicken Stock                                          2 quarts
Rotel Tomatoes                                        1 small can
Julienne Onion                                         1/2 each
Chili Powder                                            3 Tbs
Ground Cumin                                         2 Tbs
Tony's Chachares Seasoning                   2 Tbs
Chopped Garlic                                       2 Tbs
Boneless Chicken Thighs                        3 lbs

 Method:
Bring to a simmer and cook chicken for 10 minutes. Strain chicken and allow it to cool off until able to handle, then shred.

For the Seasoned Sour Cream:
Sour Cream                                            4 ounces
Tony's Creole Seasoning                        1/2  tsp
Tabasco                                                   1/2 tsp

 Method:
Combine and mix well.
